These fudgy Raspberry Brownies appear in Rescue You, Love in Brighton Village Book 5. Raspberries and dark chocolate make the perfect combination for a decadent dessert.
Maeve’s Raspberry Brownies
In Rescue You, Lark asks Maeve for brownies as payment for watching Neve during an unexpected school day off, mostly as a way to mask her own inability to say no. These brownies are nice and fudgy and taste sinfully rich.

Ingredients
¾ cup unsalted butter melted
¾ unsweetened cocoa powder
1 teaspoon vanilla
1-3/4 cup light brown sugar
3 large eggs
¾ cup flour
½ teaspoon salt
½ cup fresh raspberries (you can also use frozen berries)
½ dark chocolate chips
Instructions
Preheat the oven to 350°F. Grease and line an 8 X 8-inch pan with parchment paper.
In a large bowl, whisk melted butter, cocoa, and vanilla together until no cocoa lumps remain.
Whisk the eggs and brown sugar until light and fluffy.
Fold the butter mixture into the egg mixture.
Fold the flour and salt into the mixture until no trace of flour remains.
Gently fold in the raspberries (if using frozen raspberries, keep them frozen so they don’t crumble apart) and chocolate chips.
Transfer the mixture into the prepared pan. Bake for about 25 minutes until a knife inserted into the center comes out with a bit of brownie batter. If you’re using frozen raspberries, the brownies will take a bit more time to bake.
